Broccoli Salad with Bacon

Broccoli salad recipe adapted from a similar recipe in Eating Well Magazine

We have used this recipe at the Farm Dinners, but Donna did one recently that was more vinagrette based and used part olive oil and part bacon fat for the dressing.  Delish!

1 clove garlic, minced

1/4 cup local yogurt

1/4 cup bacon mayonnaise (From Jennifer McLagan’s Fat, also makes a perfect BLT)

2 teaspoons cider vinegar

1 teaspoon maple syrup

4 cups finely chopped broccoli crowns

3 slices cooked bacon, crumbled

2 tablespoons dried black currants

Freshly ground pepper, to taste

Whisk garlic, mayonnaise, yogurt, vinegar and syrup in a large bowl. Add broccoli, bacon, currents and pepper; stir to coat with the dressing.

Maple or Caramel Milk

Cold Maple Milk

Back in milking season and this warmth calls forth the need for Maple Milk…but hopefully some cool nights coming up will also give us a good reason to have some warm caramel milk.  A great way to celebrate local milk, delightful 2016 Maple Syrup from Brookfield Bees, and Fat Toad Farm’s Sofi nomination caramel for a fabulous product line.  Enjoy them all together, warm or cold!

Also known as Farm Gatorade – it provides that needed afternoon hydration and boost from the protein, fats and oh, yeah that sugar.

Ok, so we are a bit addicted here at the farm, but try it and you will understand why!  One of our members with young kids noted another benefit – by look you can hardly tell there is maple or caramel in the milk so the kids don’t have to know you are a getting a sweet boost while they savor the pure, unsweetened version of the milk!

Refreshing Cold Maple Milk 

Pour a glass of milk (or mix right in a quart jar)

Add maple syrup to taste, the darker the better ( 1-2 teaspoons per cup of milk, more or less to taste)

Stir, Drink and enjoy!

It substitutes for milk shakes around here, with the richness of the goat milk, yum!

 

 

Soothing Warm Maple or Caramel Milk

Warm milk (in pan or microwave works)
stir in your favorite Caramel Flavor or maple syrup (1-2 spoonfuls per cup of milk)
Sip and enjoy.

Experiencing the Artisanal En Vacances

The 2016 growing season plan included factoring in our niece Chloe’s graduation from high school in Paris. Her peers selected her as class speaker and her inspired remarks are now embedded in the rich mosaic of old world impressions we carry home. We sought an inspirational plug-in and we return electrified by a wonderful mix of rest, family time and learning adventures. We owe enormous gratitude to the farm team for enabling our long and glorious get-away.

Stone walls, stone barns, stone homes, stone streets, stone-filled soils… the longevity, simplicity and everydayness of village life drew us in.

Fast trains, high heeled shoes, art, architecture and soccer fans stand out as colorful contrasts to chateaus and canals. Perfect baguettes and pastries were the constant between villages, cities and even sprawl. Travel reminds us that our species is bold, and has been for a long time!

Touching down in small places without a hurried agenda gave us the chance to savor the difference of mineral rich, hand-harvested sea salt, and touch chords of the past via a magical encounter with Berthelemy Formentelli. and his family as they tuned the 350 year old hand-made organ he has cared for since restoring it 30 years ago.

We are lucky that it is not work for us to ignore the bling of contemporary brands, the buzz of Eurocup, the noise of media updates on Brexit and bombs.

We are lucky that our pursuit of passions has shaped us to be more “Paysan” (of the land) today than we were a decade ago. We are thrilled by our chance encounters with special people continuing mundane traditions. We are sobered that we had to work to find the remnant small-scale artisanal products and producers. In so many places and so many sectors we have lost the know-how or desire to invest in the slow, the hand-crafted, the subtleties.

Celebrating the timeless and tasty, we return with some salt from Guerande, hand tended and harvested as the wind and sun allow.  This artisanal salt, tended and gathered in same way it has been done for centuries, is a beautiful accompaniment to the food we grow with the same elements and inspiration.

Chorizo Tacos

cilantro pickled carrot taco on all souls tortilla photo from all soulsTacos offer wonderful tastes and SO much flexibility!   Our own pasture-raised pork transformed into link chorizo sausage by Green Mountain Smokehouse offers an quick and EASY way to some delightful tacos.    Add to that the newly available LOCAL corn tortillas made in Warren by All Souls Tortilleria and it is a local delight.  Here are some ideas, but obviously add to them whatever fits your mood or is hanging out in the pantry!

 

Ingredients 

  • Chorizo
  • Garlic
  • Cilantro
  • Tortillas
  • Onions/Scallions
  • A few veggies of the season
  • Black beans (optional)
  • Cheese (optional)
  • Salsas & hot sauces
  • Pepperoncini, pickled jalapenos & Mexican pickled carrots
  • Lard or other fat for browning the chorizo

Our Basic Approach

Slice the chorizo into small rounds and brown in a pan with some lard or other leftover fat.  Takes a few minutes per side, more for bigger pieces less for smaller.

If you are also adding some cooking greens to the tacos, once chorizo is done, pull from pan and set aside in bowl.  Add some chopped onion and garlic to the pan and saute briefly then add chopped greens (kale, choys..really anything!)  and saute until done to your desired tenderness.

Chop scallions/onions, cilantro and any other veggies you want as taco toppings and put in bowls or on a plate.

Black beans cooked and then marinated in cilantro-lime dressing are always a nice addition.   Or you can add the cooked beans to the chorizo at the end of its cooking time, for a hot version.

Open all the salsas, hot sauces, pickled peppers and of course some Mexican pickled carrots. And since it isn’t yet fresh tomato season, chop a little fresh cilantro and mix it into the canned salsa…next best thing to fully fresh salsa!

Heat the tortillas — which are nice done on a skillet with a touch of lard, or just warmed.

Put out the taco options and build your tacos with all of your options.
