Getting Turkeys to Boston…or not

Abundant harvests of this warm early fall are bringing glorious orange, reds, yellows and greens to the farmstand, foreshadowing Vermont’s famous foliage! Remembering that vibrancy and intensity of color, like taste, are indicators of nutrient density, we are thrilled not only to offer these delicacies to our community but also to have such spectacular indicators of our soil microbiome’s health.

More overwhelming than the harvest was a month-long delay in turkey processing.

When an empathetic farmshare member asked last week for an update on the “turkey trauma” we blushed remembering the harsh struggles so much of humanity faces.

Still, when the livestock trailer full of the 75 birds finally rolled to Westminster on Wednesday (after 3 previous weeks of postponements) we were beyond relieved.

Returning at the end of the chaotic and long day with 26 live birds still in that trailer, we were wrecked and as you can imagine, they were too. But to our delight they walked out of the trailer and made their delighted turkey noises while aggressively consuming our pasture grasses.

After this experience, we are grateful to better understand how fortunate we have been to experience the competence and commitment of colleagues like Maple Wind Farm, (processed our inspected poultry in recent years), and Royal Butcher, (our 4-leggeds). We arrive with our love-raised, pasture and organically fed livestock and are greeted with caring professionals who team up with state and USDA inspectors (no doubt its own difficult dance). These guys use their Can Do culture to overcome difficulties with equipment and the hard work and help us move our food to your plates efficiently within existing regulations.

To wrap up the story (thanks for all your patience on this) adding context for all of us interested in modern food systems here are a few of the results of the Turkey SNAFU:

Farmshare Members (some who purchased new freezers in August for this occasion) weathered multiple renegotiated pickup times and bird sizes, van rented for picking up packed birds was cancelled and rebooked repeatedly as were physical therapy appointments, pasture plans and team workplans!

We could not deliver the 30 birds promised to Chef Charlie at Woods Hill Table for their catered Thanksgiving dinners. (Birds sold to restaurants and for catering need to be inspected (state or USDA) and those crossing state lines must be USDA. During our delays we checked with the few inspected slaughter houses from western New York to Rhode Island and up to Maine but no alternatives existed. By the time our birds had lived an extra month, though on a carefully managed diet, they averaged 25 pounds and only a few were in the chef’s stipulated 18-20 pound range.) Luckily there is time for them to source elsewhere.

Meanwhile, huge thanks to The Farm at Woods Hill Manager Amber (Green Mountain Girl emeritus) for the opportunity and for dealing with this chaos. Anyone near Concord MA can say thanks to the Woods Hill Table team directly and enjoy an “organic, sustainable and thoughtful” meal at the same time!

The final 26 gave us a chance to be held up by our village!  Cousins, a sibling, neighbors, Laura’s parents as well as former and current staff rallied and did a beautiful job helping us process the biggest birds, all ready (legal sale direct from the farm) and tucked away in freezer storage for the holidays.

Learning to Drive, Vermont Style

We feel so lucky! Paris was a great place for our niece Chloé to grow up but it wasn’t an easy place to learn to drive nor to get officially credentialed. So just as her brother did 2 years back, she came to the farm to achieve this significant rite of passage on her way to Tufts. What a treat to have her extra hands for this year’s ample blueberry harvest, to have her cross train delivering supplies around the farm, learning to drive Vermont style… on a tractor. And special too for Laura and Mari to scale mountain passes, run errands and explore Vermont’s towns and cities with this purpose, enjoying great conversations the whole while!

Helicopters too…..

Speaking of learning to drive!  We have been proud neighbors and friends these last months as Mark Farley assembled his various helicopter licenses but we were excited and proud to be flown over this week as he moved towards credentials in a 4-seater.

And while not learning to drive.  We bid goodbye to Kat Rosemond this past weekend as she headed out of Vermont after a summer on our farm to dive into a new job at the Vassar Farm and Ecological Preserve.  Kat hit the ground running. Literally. A cross-country runner, Kat found many a time to break into stride as she hustled between tasks. We appreciate all the care she provided our flocks and herds, all the hours of weeding that helped Darienne keep the bounty of veggies thriving and overall bringing the farm to life and to your plates! We thank her for her positive attitude and know there are a lot of beings (human, livestock and Uno) that will miss her daily dose of kindness and care.  Best of luck to her.

Mexican Slaw

Late summer just asks for tacos.  This colorful slaw has been a big hit at Taco Nights! It makes full use of the abundance and diversity of late summer veggies.

Ingredients

  • 10 medium carrots, shredded
  • 1 large cucumber, julienne
  • 1 summer squash, julienne
  • 1 red pepper, julienne
  • 1 green pepper, julienne
  • 1 jalapeno pepper, minced or some milder hot peppers
  • 1 bunch scallions, julienne (including greens)
  • Optional — some Napa or other Cabbage, diced

Dressing

  • 1/2 c. champagne vinegar or Artesano Honey Wine Vinegar
  • 2 T honey
  • 1 tsp salt (plus more to taste)
  • 1 T Red Pepper Flakes or a bit of fresh hot pepper
  • 1/2 c. chopped cilantro for garnish

Preparation

  1. Combine all cut vegetable and pepper matter in a large bowl.
  2. Whisk together dressing ingredients.
  3. Toss the slaw with dressing 15 – 30 minutes before serving. Season to taste.
  4. Garnish with cilantro just before serving.

Coyotes, Cancellations, Culvert + Compressor = the Terrible Cs!

Listen to the spectacularly haunting chorus for yourself! I sat straight up in bed, alerted Laura (who has “activator” on her top 5 list of strengths). She and Uno were out the door in seconds. Validating our sense that the coyote were VERY close, the calls ended abruptly with the lights switching on and click of the door. We drove out the farm road toward our farthest livestock, sacrificing the charge on the truck battery, leaving radio and emergency blinkers to hold our line and returned to a restless sleep.  Subsequent actions included a night in the station wagon near a vulnerable edge, consolidating our rotating livestock — turkeys and chickens always have a pig or goat group between the perimeter fence for predator determent but now even the 4 legged herds needed reinforcement! How do we celebrate the importance of large predators and recent scientific breakthroughs linking wolf and coyote genetics and sleep through the night with 400 chickens and 80 market-sized turkeys in the field?

Speaking of those turkeys… They are looking incredibly handsome but they are supposed to be in the freezer already! A broken plucker at Westminster Meats has meant two weeks’ worth of cancellations and our stealth attempt to tame the madness of the growing season with tactical scheduling for our pinch points isn’t panning out.

 

 

We are usually still optimistic about the day during our dawn cup of tea  but last Friday Laura lifted her mug, looked out the window and darted out the door again, announcing that Nimbus and Zephyr were out. We are lucky. Our livestock rarely get out and since culvert with uno for sizeswe move them frequently they follow us and are easy to herd back. However we realized luck wasn’t with us when the three other milking does were not in the fence. Neighbors responded to our listserve inquiry.  They were nowhere to be found. Nor after scouring the roadside and nearby vegetation was there any sign of them.

So improbable was the culvert that we didn’t look there for 45 minutes. But sure enough a few feet in the culvert was the visible twitching tail of Grace Kelly. Her body filled up the hole so we couldn’t be sure but immediately concluded 3 were “holed out” under the barn driveway.

The ordeal that followed utilized our best teamwork… Kat grabbing headlamps and climbing gear from her car, Donna pulling Mark’s neatly coiled lengths of web strap from the truck, Darienne gently speaking to the goats down the length of the hole, Mari’s what if voice thinking out loud to try to ensure that we kept Laura safe as she proved she wasn’t claustrophobic, Army-crawling her way to the does in distress.

 

 

Eventually it was like the few bad rounds of kidding we’ve had these last 8 years… we grabbed a hoof, then 2 and worked our way up higher on the legs, barely able to reach in, and pulled… Next thing you know — Donna is cutting Grace some browse and she is munching Black Locust leaves like nothing ever happened. The team confirmed the other two were alive. We reviewed what we had learned in rescue number one, tweaked our technique to extend Laura farther in and to handle the youthful strength of Annapurna. Next thing you know mother and daughter were both enjoying the browse.

But Ingrid Bergman was farther in still, where 2 culverts joined and, at some point in history they buckled.  In fact if this pinch in the tube wasn’t there perhaps all 3 goats would have Army-crawled all the way through.

This time we tied a line on Laura (what if she passed out 25 feet in at the midpoint under the barn driveway?). Instead Laura held steady, managed to get the straps across Ingrid’s chest and fed the length onto Darienne’s roof-rake pole extending from the opposite direction.

Laura, face to face with Ingrid, used all her strength to pivot Ingrid who let out the same awful noises of a doe in difficult labor. But finally the spine and horns were no longer caught on the rough edge of the culvert. Laura gave the team the green light to pull, maintaining watch that the straps didn’t shift to Ingrid’s neck and throat. Heave, breath, listen. Heave, breathe, listen, Heave…. and suddenly we were all above ground.

The 5 milking does were reunited for a temporary hold in hard fencing near the barn while we collected ourselves and the random tools utilized for the rescue. They didn’t seem phased in the least.

After action review methodologies confirmed that we had all felt safe during the response but also pointed to the everyday menace of the common stable fly who’s incessant harassment of the does had likely caused them to seek out such an unlikely diversion from their black locust and sun-choke roadside special assignment. Ironically the unusual paddock had been designed as a shady treat in the midst of the relentless heat wave.

About  that heat wave! Humidity, heat and the final droughty days of last week felt oppressive to us and apparently to the walk-in compressor too. Unfortunately we did not notice the failure of the walk-in freezer until it was 34 degrees. Rapid response of the team moved lower level shelved boxes of meat still frozen to other freezers in the neighborhood and inventory of some juicy boxes of berries etc. began.

Luckily, though our insurance would not  be relevant to losses to coyote, cancellations or culverts we do have “spoilage” coverage so we believe most of our losses will be covered.

So the drought-ending 4 inches of rain and recent incidents leave us looking at the world very differently this week than last. And with California’s fires and Louisiana’s floods putting things in perspective, we are feeling very humbled but lucky this week at the farm.

PeppersFinally some rain…for some happy plants (and farmers too!)  Lots of good summer eats for a veggie focused meal or a nice pair with our pasture raised meats!  And the peppers are beautiful and diverse!   A variety of shapes, sizes and colors of sweet peppers from little lunchbox delights to Purples and a new one for us a longer oranos orange pepper and the poblanos are lovely too!

herb gardenThe pick-your-own herb garden is open with a mix of herbs and edible flowers to harvest in the volumes you need.  We have a mix of items in various amounts including: thyme, lemon thyme, oregano, sage, dill, calendula, borage, marshmallow, mint…oh and plenty of comfrey.  There is also some basil and cilantro, which will be harvested and in the farmstand.

And Field Stone Farm is rounding out our offerings with not only a great fresh pizza with grilled eggplant and fresh tomatoes – perfect on the grill, but also some cukes, beans and fresh garlic, also like us all managed organically!
