Creamy Beetroot Risotto

Based on BBC Good Food Recipe

So creamy, delicious and what a color!  A great different way to enjoy your beets. Thanks Donna (as always) for a great introduction!

Ingredients:
2 lb (approx) cooked beets (either previously roasted, or boiled)
4 Tablespoons Lard or other yummy fat
2 Onions, chopped
2 Garlic cloves, chopped
2 C risotto rice
1 C white wine
6 C hot stock/bone broth
A couple of handfuls of grated Parmesan cheese
1/2 C Sour Cream

Heat oven to 325.

Heat the lard in a large ovenproof pan with a lid. Tip in the onion and garlic, then cook for 3-5 mins until translucent. Stir in the rice until well coated with the lard. Pour over the white wine, then let the mixture bubble away for 5 mins.

Stir well, then pour over the stock/bone broth. Stir again, cover and place in the oven. Cook for 15 mins until the rice is soft.  Whizz ¼ of the beets (in a food processor or with a hand held blender) to make a purée, then chop the remainder into small pieces. Stir most of the Parmesan, the beet purée and chopped beetroot through the risotto, then serve with some sour cream and extra Parmesan on top.

Happy New Year…2019!?!

Warm greetings from the farm to all for a new year full of delicious, healthy food…preferably local too!

At this time of year, many of us are using the turn of calendar for a fresh start, new resolutions, changing habits.  A friend encouraged us to have our resolutions be more or less of _____   as opposed to absolutes…perhaps easier to achieve.

For me, I seek to get out of some of my ruts and try more new ways to eat the produce, fruits and meats we (and other great Vermont farmers) produce.  I do find it amazingly refreshing how a new twist, approach or recipe can re-invigorate my love for a particular food.  I suppose that may mean I get into some new ruts, but ruts are part of life right. (yes, mud season will come!)

So we invite you to share some of your tried and true or new favorite ways to enjoy the foods we raise.  Perhaps your rut will be someone else’s inspiration!

And remember, there is a nearly 10 year (Holy cow!) history of recipes on our website that can be searched, enjoyed and improved upon!

The dish we made on Christmas Eve to share with family really triggered this resolution and we have our farmshare member, Jo Ann, to thank.  Her trip to Hawaii this year, got her inspired by Beet Poke and she not only shared the recipe, but brought us a taste test.  Hers was inspiring and our version (didn’t have handy some of the unique ingredients that make it truly Poke) was still delicious and a flavor scheme we hadn’t hit in quite a while.  And it made a fabulous addition to our festive 100% local Christmas brunch!

Like all of you, we have been busy as elves (or farmers I guess) tending to the lovely greens in the hoophouse, transforming some of the growing season’s bounty into delightful treats for the holiday season and stocking the farmstand with items to make your cooking easier & local.

We packed up a lot for the Holiday market last weekend (thanks to all that came!) and have our farmstand stocked. We are thankful for such delicious, healthy bounty and are glad some of it will be a part of your holidays as well.  Thanks for making our farm part of your year.

Holiday Pancakes

Or depending on the audience you could call them Pretty Pink Pancakes or what they are…beet pancakes.  They are quite spectacular, we love them with some blueberries or other fruit, adding to the mornings color with some yogurt on top! And perfect with some of the farm’s pasture-raised Maple Breakfast or Alsatian Christmas Sausage.

Mari figured this out several years ago and has continued to play with it, as it is with pancakes,. Thus we don’t have a firm recipe. Instead, we have used our basic sense of pancakes or even adding the pureed beet to Nitty Gritty Grains cornmeal pancake mix (a nice local mix of cornmeal and flour) – that might have made the best batch.

Rogers Farmstead Flour or even Pancake Mix is a great way to make these super local!

Here is an option to get you started.  If you have it, I would replace some of the flour with cornmeal or buckwheat.  This version is from Weelicious, serves 6.

 

1 Cup Vermont Flour

3/4 Cup Whole Wheat Flour (or cornmeal or buckwheat flour)

3 Tbsp maple syrup (optional)

1 Tbsp Baking Powder

1/2 Tsp Kosher Salt

about 1 cup beet puree (2 medium beets roasted or boiled and pureed*)

1 1/4 Cup Milk

1/3 Cup Plain  Yogurt

1 Large Egg

3 Tbsp Unsalted Butter, melted

1 Tsp Vanilla extract

1 cup or so of Blueberries (optional, but delicious)

Place the dry ingredients into a mixing bowl.

Put the rest of the wet ingredients into a separate bowl and mix well.

Add the dry ingredients into the wet and stir until just combined (you don’t want to overstir the batter — some lumps are good.  Stir in blueberries, if using.

Drop about 2 tbsp of the pancake mixture onto a greased griddle or pan over medium heat and cook for 3 minutes on each side.

Serve with desired toppings!

*To make the Beet Puree:

Wash and cook beets (no need to peel, just trim), either boil for 30 or so minutes until tender (longer for larger chunks), use leftover roasted beets, or bake in oven until tender.  Drain well and then puree in food processor or with immersion blender until smooth. You can make a large batch ahead and freeze it, taking it out as you need it for pancakes, brownies, cake.

It is feeling like mid-winter, but rather the holiday season is upon us! Despite the weather, our team has some lovely fresh salad greens, cooking greens and spinach to go along with our pasture-raised meats, and organically managed root veggies!   And eggs are back in plentiful supply, thanks to our friends at The Farm at Woods Hill.  They have an overabundance, share similar practices to us, including feeding organic grain and are sharing with us.
