Now, January in Vermont isn’t really considered grilling season, though many do, but we have fallen in love with the pork grilling steaks and they are great even stovetop. So here is a simple and delicious option.
Ingredients
Pork Grilling Steaks, either Sirloin, Sirloin tip or other grilling steaks
Kosher Salt
Pepper
Some lard or other pork fat
Directions
Heat a cast iron pan with a bit of lard or other good fat
Salt and pepper the steaks well
Sear on both sides and then turn down to medium and cook until done, about 7-8 minutes, don’t over do it – 145 degrees internally will do. Yes, cook them like a beef sirloin steak.
