Salsa Verde, Fresh!

Oh, it is the season for fresh salsa and there are now tomatillos to use as well!   Like most fresh salsas, this is just a general guideline and you can add more or less based on your preferences and what you have!  Based on a recipe from Simply Recipes; they roast the tomatillos which is also good, but we love the fresh, green taste of raw tomatillos.


1 1/2 lb tomatillos

1/2 cup chopped onion

1/2 cup cilantro leaves, chopped

1 Tbsp fresh lime juice

1-2 hot peppers, seeded and chopped

2 cloves garlic

Salt to taste



Husk and wash tomatillos, then puree in food processor (or chop finely).  Mix all ingredients.  If you have a good food processor you can do almost all of it in the processor.  Just don’t puree red onions with the tomatillos or you’ll get a purple salsa.  Taste, adjust and then enjoy with chips, on eggs, meats or whatever else you can think of.
